What is water weight, exactly?

Is it exactly what it sounds like...water extracted from foods and stored in your body? In that case, to get rid of it you just pee it out? If so, why the hell do you gain so much water weight from eating a lot of carbs...while I can see pasta or rice or eats containing a ton of water (since they absorb it while cooking), I can't imagine a baked potato being all that watery.

When you store muscle glycogen, a certain amount of water is also stored along with it. The figure I forget but maybe something like 2.8g water per gram glycogen.
Other components of water retention include...
Water retained in colon/intestines (up to a few pounds maybe). This can be caused by absorption by fiber etc.
Subcutaneous water retention. Tough to predict this.
Electrolyte levels (Na, K, etc) can influence this too.
