Does anyone know if it is alright to cook with Coconut Oil in general? Rather than non-fat cooking spray?
Or does this turn rancid and have trans fats when heated? If so, what purpose does it serve and how else could you eat it

Because coconut oil is pure saturated fat (also MCT), it will not turn rancid when you cook with it. It's perfectly fine to use for cooking.

this is the only oil I use for cooking, love the flavor it gives to meals
