Place in a blender (has to be a blender, food processor doesn't get it smooth enough)
1 box Mori Nu silken tofu (regular or low fat, your choice)
1/2 heaping teaspoon salt
2 teaspoons prepared horseradish OR dry mustard powder
2 peeled cloves of garlic (or if this is too garlicky for you, use a half-teaspoon or so of garlic powder (not garlic salt!)
2 tablespoons of any kind of vinegar or lemon juice or combination of the two
Blend. Scrape down any bits sticking to the sides. Blend again. Take 'er up to max and let it run a couple minutes, until perfectly smooth. Store in a mason jar in the fridge; keeps at least a week, week and a half. (Don't keep it in plastic; the garlic leaches in.) Makes about 1 to 1.5 cups. If you like sweet mayo, you can sweeten it to taste with whatever real or fake sugar you prefer.

I just made it, its so yummiesss! Akateros thanks!! I also added some LF cottage cheese to thicken it and half of avocado ( just coz I had it ), its so tasty I won't care when everyone runs away from me tomorrow!
Jenny tofu doesnt really have its own taste, well maybe just slight, it takes the flavour of whatever u cook it with....

Ewwwwww......tofu. This really doesn't sound that appetizing to me but I'm willing to give anything a try once. After my comp I will make it and try it. What do you put it on?

The tofu sounds fine to me it's the garlic I'm not so sure about. Garlic in mayo? I'll try it though.

Jodi, I've tried it so far on bread, not bad, but mine had too much garlic for that, I think if there was less garlic in it ( i put 4 cloves ) it's would've been fine on bread too. It was however great with bolied potatos salad ( cold)!

Jodi, I put tofu mayo on everything. Sandwiches, dip for veggies or oven-fried chicken, diluted with soymilk and heated as a creamy pasta sauce (think Fettucine Nonfredo). Very versatile stuff. (Amazing, how things I learned as a vegan have come in handy later.)
I ate tofu mayo all through my so far solitary comp prep. Seven or eight calories per tablespoon, mostly protein, no dairy -- it got me through twelve weeks without cheese.

my sister is an extemely picky eater! Maybe i will make this Home-made (Mayo) and have her over 4 lunch? She can spread (oh so nicely) on her sandwich? BET SHE'LL LOVE IT!! ....then i'll tell her she just ate Tofu! HAHAHA! What R sisters for?
