unbleached flour

I am a little confused.. what's unbleached flour? It's not WW flour is it?
And is unpolished rice actually the same stuff as brown rice?

Theres one main difference between unbleached and bleached flour is the color; one is off-white and the other is pure white. Technically speaking, the carotenoid (yellow) pigments in the flour are oxidized to produce white flour. Flours treated with these bleaching agents must be labeled as bleached.

Unpolished rice is the more natural form of rice (sticks together, splits down the middle when cooked)
Polished rice is like Uncle Ben's rice. Some people don't like the rice sticking together. yada yada yada.

Its just a type of food processing.
Not sure if there is any nutrition difference after its been done.

Unbleached flour is not whole wheat flour. It's really the same as white flour.

thanks for the explanations guys! I was hunting for brown basmati rice, but all I can find is unpolished basmati.... no worries, my fragarnt thai brown rice is yummie too..

I think it's historical reasons. In years past, only the lower classes ate the rough whole grain breads. They couldn't afford the cost to refine the flour (they were better off anyway). The upper classes used more refined flours. It cost more to do, they had the money, so they were showing off. Bleaching the flour is taking it one step further and making it the ultimate that it can be processed and refined.

Now, that's conjecture on my part. Someone may correct me.
