Pumpkin Muffins

1 c Pumpkin
1 tsp Cinnamon
1/2 C. Egg Substitute
1 tsp Vanilla Extract
6 tb WW Flour or Buckwheat Flur
1 tsp Baking powder
1/2 c Carrots; grated
2/3 c Casien Whey
10 pk Sweetner
2 tsp Pumpkin pie spice

Mix all ingredients. Spray muffin tin with Pam. Divide equally. Bake at 350 F. for 25 minutes. Makes 12 muffins.

Thanks for the Pumpkin Muffin recipe. I consider myself a "Muffin Maker Master" but now that I'm "getting back into shape" I might be revising a few of my muffin recipes? what do U all think of using a tad "white flour" mixed in with WW flour and unprocessed bran and wheat germ and some flaxseed? It sounds like a well put together "Grain packed Carb" for a breakfast or a snack? NOTE: I heard on Oprah that John Travolta likes his Muffin and Fresh fruit for breakfast, so if it works for him...it should work for us!

just FYI. I added up the macros on Fitday for this out of curiosity.

Entire mix:

Calories 733
Fat: 10 (12%)
Carbs: 92 (44%) (Fiber 15g)
Protei: 74 (42%)

Divided by 12 muffins, each muffin:

Calories: 61
Fat: 0.83g
Carb: 7.6 (Fiber 1.25)
Prot: 3.5
