1/2 c. canned pumpkin
2 T water
1/2 tsp vanilla extract
1/3 c. Casein Whey
1/4 c. egg substitute
6 pkts Sugar Substitute
1/2 tsp baking soda
1 tsp pumpkin pie spice or (1/2 tsp cinnamon + 1/4 tsp cloves + 1/4 tsp allspice)
3 T WW or Buckwheat Flour
Combine pumpkin, water, vanilla, milk, and egg. Add splenda. In a
separate bowl, stir together flour and spices, then add to pumpkin mixture.
Pour into a sprayed mini-loaf pan. Bake at 350F 30-35 minutes. Cool 10
minutes then remove from loaf pan.
I made both these pumpkin recipes this morning to get rid of the canned pumpkin I had so I don't make something evil instead The muffins were good. The pumpkin loaf is cooling right now so I haven't a clue yet. I got these off the internet and then just modified them to fit my diet.

Any particular reason for the casein? Would WPC work just as well? Did you use unflavored casein?

I try not to cook with WPC due to it breaking down. If you don't really care about that then you can cook with it but personally at that point I think it's useless calories.
