Hi, I'm new and looking for advice

I'm a forty year old woman, and I own a 30 min. workout gym for women. I am not a personal trainer, but am trained on the equipment that we use, this has helped many women that don't like to exercise or have limited time to do it. I myself am overweight and would like to set a good example to these women. I have a very outgoing personality and try to create a warm and inviting atmospher, and I have staff members who are qualified in the fitness field. I know you guys don't think much of these places,
but its a great start for these women and does let them challenge themselfs by working harder.
My problem is I need to lose fat through diet, I'm such a fussy eater and work very long hours, I have horrible cravings for fatty foods and sauces. I know my problem is not eating enough and craving things later. How can I make things taste good without the fat and sauces? I hate cottage cheese, tuna or fish of any kind :-(. I am trying to take two protein drinks a day, one mid. moring and the other mid afternoon.
I also want to shape my legs, butt, tummy, chest and arms, I have 3 to 7 pound weights at work and spend a lot of time there, I just find myself making excusses because I get busy and think I can do it later, but don't.
I really think I know all the right things to do, I think I just need some advice, support and know how. I want a lean body for once
One more thing, If I take a protien drink twice a day mid morning and mid afternoon, what if I can't time my workout so that I'm talking it directly after? does it matter? can I just keep taking it at schedled times?
Any advice would be greatly appreciated

Howdy!
Don't fear asking questions! As for the food thing, make sure you eat enough at enough meals. I'm not a hugh fan of fish all the time, so I eat a lot of chicken. As for the flavor thing, allow me to introduce you to your spice rack, and their friends the herb family...
