• Florentine Lemon Turkey Loaf
Here's something I found that's a little different than your traditional turkey loaf. The nutmeg also provides a little kick to it.
However, this recipe probably doesn't beat Jodi's Cottage Cheese one.

INGREDIENTS
ground turkey 1 lb
cooked spinach, drained and chopped 1 cup
whole wheat bread, crumbed 1/2 cup (I would replace with 1/2 cup oats)
egg, beaten 1
medium onion, chopped
clove garlic, minced
parmesan cheese 2 tbsp
lemon rind, grated 2 tsp
each, salt and pepper 1/2 tsp
nutmeg 1/8 tsp

DIRECTIONS
In medium bowl, combine all ingredients. Mix gently. Place into 2L (9" by 5") loaf-sized baking pan and pat down gently. Bake at 180°C (350°F) for 60 minutes or until loaf is no longer pink in the centre. Let stand 10 minutes. Slice and serve.
Makes 4 sevings.

NUTRITIONAL INFORMATION
Per serving:
225 cal; 30g protein; 6.4g fat; 10.9g carbohydrates.

sounds good, i think i will give it a try on sunday when i make my food for the week

Turkey loaf is such a great timesaver meal, I like to add a little olive oil to the mix to keep it moist when you re-heat it.
