Ricotta Muffins

I found this recipe and it looks interesting. I think I would try it with chocolate casein protein powder and almond extract or cinnamon extract.
Vanilla casein with banana or orange extract might be good too.
Ricotta Muffins
3 eggs
2/3 cup protein powder
1/4 cup ricotta cheese
4 packages artificial sweetener
1 teaspoon cinnamon -- cloves, & nutmeg
cloves and nutmeg -- to taste
1/2 teaspoon vanilla
1 teaspoon baking powder
1 cup water
Mix all the ingredients and pour into non-stick sprayed muffin cups (6
regular size). Bake at 350 degrees for approximately 30 minutes. Makes
6 muffins.

do you think it would work with cottage cheese? Maybe not fat free but 2 or 4%?
