i always hear people on this board praising the chicken breast.... should i not be eating the legs and thighs???

Props my friend.

In any case, I think its because the breast is a leaner cut of meat that the thighs and legs.

yeh i figured it had something to do with fat or something in the darker meat that makes it more "moist".

yes, the breast is a leaner than the thighs and legs which contain dark meat. plus the amount of meat in a breast is substantially larger. you might have to eat 5-6 legs to equal the same amount of protein in a large chicken breast.

While fat does have to do with the darker meat being more moist, it also gets its dark look and moist texture from having more mitochondria in the meat. Since the chicken walks a lot more than it benchpresses, it makes more mitochondria in its leg muscles thus giving them the dark look.
