blue berries

this might sound funny to some of you but this is the first time i ever ate them fresh. i and love them mmmmm, i wanna know if these are calorie dense and if i can eat them on a cut also. i heard they are good anti oxidants so anything else

Blueberries are an great fruit and can certainly be included in a cut if you want! They are not calorie dense at all...
1 cup (~150g/5 oz) is -
80 cals
20g carbs (3-4g fibre)
1g protein

Which is the same as a medium apple.

They are an excellent source of anti-oxidants (anthocyanidins) as well and have stacks of Vit C and Vit K in them! They are great for your heart, eyes, brain, have anti-cancer properties and help lower cholesterol too...

Not only that - they are REALLY good mixed into a warm bowl of oatmeal where they go all soft and melty and make the oats taste all blueberry flavoured.....

This recipes is courtesy of atherjen and I've seen it on the splenda website before. I've yet to try it, but it looks good.
Oats also taste awesome with some cut up strawberries.
Blueberry Quick Bread

Servings: 10 Serving

• 1 3/4 cups oat flour (grinded oats)
• 2/3 cup plus 1 tablespoon Splenda
• 2 teaspoons grated lemon zest
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1 1/2 cups fresh or frozen blueberries
• 1 - 8 ounce container low fat lemon yogurt
• 1 egg*
• 2 tablespoons melted butter

Preheat oven to 375°F. Spray non stick loaf pan (8 1/2 x 4 1/2 or 9 x 5) with cooking oil spray.

In bowl, mix 2/3 cup splenda, flour, baking powder, baking soda, lemon zest and salt. Stir in blueberries. In a separate bowl beat egg, yogurt and butter and add to flour mixture. Stir until moistened - batter will be very thick.

-Put into prepared loaf pan and sprinkle with 1 splenda.

-Bake 50 minutes or until an inserted toothpick comes out clean.

-Cool 5 minutes, then invert on wire cooling rack and cool completely.

*Works with egg substitute, but texture is slightly compromised.
