Is it ok to eat LOTS of vegetables at once?

hey guys, I love vegetables. Sometimes I make a nice big stir-fry with zucchini, broccoli, cauliflower, green peppers, mushrooms, cucumbers, spinach, and cabbage. (Stir-fried in water of course ) Basically, a whole bunch of cooked vegetables. Anyway, I'll eat a big bowl of these. I should count these calories right? These aren't just a few greens, these are 'meatier' veggies and the calories will add up, especially with broccoli. Is it alright if I consume all these veggies as a meal, as long as a add a nice protein like chicken?

I'm not sure of the calories, but just reading this made my mouth water.

I did a google search, and found this.. http://www.dietbites.com/CalorieIndexVeg.html
at the bottem of each table there is a link to take you to more pages of vegies, and their calories.

ok cool I'll check it out. There's nothing like a BIG old bowl of cooked vegetables, add in a little seasoning and you're set. I like to cut the zucchini into long thin strips, they make a nice noodle substitute.

Cucumber in stir-fry?

I guess you could, but its still not going to be very much.

JUst rule out the Fiber and the protein content when you count them.

Have you ever had spaghetti squash? That makes a very good noodle sub. also. It is also much easier b/c it is already in noodle form when you scrape it off instead of having to cut it up like you would a zucchini.

I eat TONS of raw veggies daily. I pack a friggin garden load every day and snack at work.

No but I have heard of using this as a noodle substitute, I'll pick some up.

I like vegetable too,but i will put some meat, then eat them!

Well, I never count veggie calories. They are almost always pure fiber, with maybe a small amount of protein that is practically negated by the thermic effect of food. In fact, some veggies constitute negative calories because they take more energy to digest than they provide.

However, I'm assuming you use some oil in the stir-fry that should be counted. Carrots should also be counted, as they contain a decent amount of sugar.

Right, well I use no oil (water) and definitely no carrots (don't eat tomatoes either). But seriously this is a HUGE plateful of vegetables that fills me up. I always accompany this dish with some meat/protein. One cup of broccoli is around 45 calories. If you ate 3 cups of broccoli you wouldn't count the ~140cals ?

you guys ever had grilled eggplant with olive oil and black pepper. OMIGOD!!!!

I think it's really good for you. Veggies are your friend, especially when your cutting!
