I really enjoyed 4 large poached eggs with 2 pieces of malted brown bread with sunflower seeds. Bread nutritional info:

per 100g

p 9.8g
c 36.6g
of which sugars 2.3g
fat 4.7g
of which saturates 0.9g
Fibre 3.9g
Sodium 0.5g

would this meal be ok twice a day?

Depends...

what are your goals?
what is the rest of your day like?
does this meal fit into your calorie intake?
does it give you the right amount of carbs/protein/healthy fats and fibre?
do you mind eating bread?

But I can tell you:
1. Just looking at the macro nutrient ratio's in the bread tells us very little - it is the ingredients that are more important.
2. 4 eggs in one meal may be too much fat (20g fat, 6-8g of which is saturated). What about using 2 eggs and 4 whites instead?
3. Add vegetables and it would be better
4. I would pick a better bread too. Something with more fibre and less other crap. eg: essene bread or sprouted bread. Pumpernickel (wholegrain) would be ok too.
