It's the excess/extra unused calories that you intake that turn into fat.

Well... not really... Not in the grand scheme of things. Fat has the same amount of calories per gram be it liquid or solid.... (9 cals/gram).
But different types of fats exist in different states when at room temperature. Generally speaking saturated fats are solid at room temp, where your poly-unsaturated and mono-unsaturated fats are liquids. And these fats are processed differently in the body and will be of different use to your body...
But, as I said, if your cals are over maintainence and you do not require those cals (for health, energy or anabolism) then generally nothing good will come of them...
