How much protein should a person take each day? how do you measure that?

For example: My height: 5'8 Weight: 160
I run for 25 min. then workout on 2 muscles each day for 3 days, the rest.

How much should I be taking daily, and how many carbs?

Generally - 1 gram of protien per lb of bodyweight
I would say in the realm of 150-180 grams daily for you. I'm not exactly sure on the carbs but I have heard 2-3 grams per lb of bodyweight.
I don't know if you are working out 3 days in a row and then resting.
If you are, I would suggest breaking those days up throughout the week depending on your schedule.

Depends a little on your goals, overall calorie intake, body fat% etc etc..

But, generally, you want a minimum of 1g per pound... 1-1.5g per pound of protein is usually the suggested range.

Usually 1-1.25g TOTAL weight or 1.25-1.5g LEAN weight...

Carbs - it really depends on your goals.

I workout 3 straight days, then rest 1 day.

I want to lose some fat from my belly first, that is why Im doing 25 min. cardio. Im lifting weight to stay in shape, but my primary goal right now is to lose some fat...

am i the only one here that finds it MORE difficult to eat less than 1.5g per lb, than it is to eat more????

Nope... I am the same... I could eat my bodyweight in salmon and cottage cheese...

i am the exact same way. i'm so glad you asked this question.

my protein requirements are complete before i even have my fifty gram protein shake post workout, and then i eat a pound of cottage cheese before bed.

i am of the belief that its not physically possible to eat more than 3k calories without eating two times your body weight in grams of protein.

i really dont get it.

very true, the more carbs and fibrous veggies you add to a meal, the less and less meat you get. I cant bring myself to have say 20g protein from a meat with 10-15g from a vegetable to get my 35g... I always shoot for 30g from a meat source and that pushes my meals to like 40g +.

depends on whether or not you are able to get all your required protein from real food sources.
