Title: Healthy Coq Au Vin
Yield: 6 Servings

Ingredients

2 1/2 lb Boneless skinless chicken
-breasts; diced
2 tb Chopped onion
2 tb Vegetable oil
8 sm Onions
4 Carrots; chopped
3 Celery stalks; chopped
4 Potatoes; quartered
1 Garlic clove
1 cn Mushrooms - (3 oz)
4 sprigs Parsley
1/4 ts Thyme
2 c Red burgundy wine
1 tb Cornstarch

Instructions

Preheat oven to 350 degrees.
In a large skillet, brown chicken and chopped onions in oil. Add whole
onions, carrots, celery, potatoes, and garlic. Cook 3 minutes. Add
mushrooms, parsley, and thyme. Arrange in a 2-quart casserole dish. Add
wine. Cover and cook 2 hours; stir occasionally. Thicken with cornstarch
and water at end of 2 hours.
Serving size is 1/6 of recipe.
