Mocha Fudge Pie!!

1/3 c. hot water
4 tsp. instant coffee granules, divided
4 Tbsp. Kahlua or other coffee-flavored liqueur, divided
10 oz. light fudge brownie mix
2 tsp. vanilla extract, divided
2 egg whites
3/4 c. 1% low-fat milk
1 oz. package sugar-free chocolate flavored instant pudding mix
3 cups frozen reduced-calorie whipped topping, thawed, divided
Nonstick cooking spray

For crust, combine hot water and 2 tsp. cofee granules in a medium bowl. Stir well, then add 1 Tbsp. Kahlua. Add brownie mix, 1 tsp. vanilla and egg whites, and stir well. Pour into a 9-inch pie plate coated with nonstick cooking spray. Bake at 425 for 22 minutes and let cool completely.

For filling, combine 1 tsp coffee granules, 2 tbsp Kahlua, 1 tsp. vanilla, milk and pudding mix in a bowl. Beat with an electric mixer on medium speed for one minute. Gently fold in 1 1/2 cups whipped topping spread over crust.
Combine remaining 1 tsp. coffee granules and 1 Tbsp. Kahlua in a bowl; stir well. Gently fold in remaining 1 1/2 cups whipped topping and spread evenly over filling.

Serve immediately or store loosely covered in refrigerator.
