I got this recipe from Food Network and made it this weekend. It's awesome. I didn't even mind the tomatoes, which I normally don't like.

2 tomatoes, cored and sliced
1.5 cucumbers, peeled, seeded, and sliced
salt and pepper
2 tbs. red wine vinegar
3 tbs. olive oil
1/2 C. feta cheese, crumbled
**I also added diced red onion**

In a medium bowl combine tomatoes and cucumber. Season with salt and pepper. Add vinegar and olive oil. Toss to coat. Sprinkle on feta and serve.

Baby spinach or arugula and fatfree feta or farmers cheese
As dressing: apple cider vinegar and fatfree plain yogurt
On top: cinnamon and mint

i know it sound a little weird but believe me it tastes good

when i have it, i add waldenfarms blue cheese sauce

delicious!

this is a greek salad....I live off these when I visit Santorini.

I believe Greek salad also adds olives but it's essentially the same.

Sounds like the same thing I do to my cottage cheese, except I eat the cucumbers whole.

I have to have red onion on all of my salads and sandwiches! Well except for peanut butter and jelly that would be nasty.

I love to do Cucumbers, tomatoe, and feta - witha splash of balsamic vinegar and shake it all together...
