BB Lasagne

Okay...it's not really lasagne, I just said that to get you in here , but it really does tastes like it. I made this dish and it's so yummy. I don't have the breakdown for it.

1 large egg plant, sliced 1/4" thick
olive oil
1/2 onion chopped
1 clove garlic, minced
28-oz can tomatoes, drained
2 tbsp parsley
1/8 tsp cinnamon
1/8 tsp pepper
1 1/4 cups cottage cheese
1/8 cup parmesan cheese
1 egg
cooked lean ground beef or turkey
Grated cheddar or mozzarella cheese

Brown egg plant in olive oil & set aside. Saute onion & garlic in olive oil. Add tomatoes, parely, cinnamon & pepper. Simmer, uncovered for 5 minutes. Spread 1/2 the tomato mixture in a greased baking pan. Mix cottage cheese, parmesan & egg and beat well. Spread over the layer of tomatoes. Sprinkle ground beef over (use however much you want). Arrange eggplant slices, overlapping, on top of beef, then spread the rest of the tomatoes & top w/ grated cheese. Cover tightly & bake at 375 for 25 minutes. Uncover & bake for another 10-15 minutes.

....it's very yummy!

What if you add that high protein pasta? Wonder if they make it in lasagna noodles....

I'll give it a try, I'm always looking for new recipes. I find that changing up the menue helps with my protein intake. I don't eat for pleasure, I eat for fuel. So this looks as if it may actually taste great.
