1/4 cup 0-carb egg protein powder, vanilla or plain
2 tbsp. flax meal
1 egg
2 tsp. baking powder
1/4 cup heavy cream (or coconut milk)
1/2 cup water (approximate)
1/2 tsp. vanilla
Pinch of sweetener
Mix ingredients and cook in melted butter on a griddle just as you would regular pancakes. Entire recipe has 6g carbs and 1g fiber. (mixture will be rather watery, but cooks up okay)

Made some protein pancakes last night. They were simple but just "average" in taste:
1/2 cup Atkins bake mix
Egg beaters
1/2 cup water
1 tsp baking powder
2 packets S/L
Basically its pure protein -- I am sure if you added some carbs the taste would dramatically improve.

TP....have you got an alternative recipe for the Atkins bake? I've seen it a hundred times on the net and now that I want it I can't find the damn thing.

Not really but I found a website that sells similar low-carb type mixes. I'll PM it to you. Atkins sells his stuff by mail and on line -- his mix is pretty good. I bought mine at GNC.
