Just wanna double check that protein does not lose its quality if u heat it up in the microwave, e.g. when u prepare your oats and whey protein.

cheers

Good post, except this: "In some cases the denaturation process is temporary (e.g. whipping egg whites into a foam); "

You can't temporarily denature a protein. Once it's denatured, it's denatured.

No dude it difinitely doesnt.. i use it for all types of s*%t..I no this chick that use to put protein in her muffin mix the s*%t tasted good

I disagree. It's simply a change of state. Unfolding the tertiary (and other) structures but not down to the primary structure.

In a lot of instances (from the little chem I took, many moons ago) denaturation in many proteins IS temporary. Once the denaturing agent is removed or a renaturing agent is applied.

Sometimes it's permanent...like when heated (egg whites from liquid to solid is irreversible for instance)

Trouble will have better insight on this action though, if you want to give her a buzz.

Depends on the degree of denaturation. Secondary structure can be lost by heating and regained again, although the refolded state may vary from the original, and so have altered function in living tissue.

I wouldn't nuke my whey if you are using a blend or a concentrate - which features whole proteins known to be important for immune system health. I would lightly cook the oats and add it to my whey instead. If you are using an isolate, it doesn't matter, they are predominantly short peptides that probably won't change by being heated for short periods of time.

Thermal denaturation is necessary for proper digestion of some proteins, like eggs. Without it, endopeptidase (proteases) enzymes are unable to break down protein into peptides. This is not the case for delicate whole whey peptides - you want the intact structure for its biological function (other than simply providing amino acids/protein as macronutrients).

that's a lot of good info cheers boys.

most of it good news, and basically it's not really a big deal if I microwave my whey protein and oats 4 a minute or so?

Posted by: danchubbz

just checked my whey protein, it's EAS 100% whey, protein blend - concentrate + isolate.

Please say there's no major problems with microwaving it 4 a minute with my oats cause it's one of my favourite pre and post snacks!!!

Posted by: Trouble

You can microwave it if you wish. I wouldn't, though, its a blend. 4 minutes on high is enough to cook a chicken breast, for comparative purposes. Why in heavens do you want to cook your whey?

Posted by: danchubbz

just to soften up the oats as I use whey instead of milk - any suggestions how I could better this?

Posted by: Trouble

Typical way would be to add water to the oats to make a slurry, then heat it for short bursts at lower power percentage (~60%), for a few minutes. Then add the slurry to your whey protein, also throw in some rice or oat bran *after* heating, to increase the micronutrient and fiber consistancy of your whey shake.

ok will do- cheers 4 the feedback.

how much damage would it do to my whey protein blend cause just done it your way and it didn't come so so good, too runny!!

Does it effect the quality of the protein a lot?

Too much water then. Don't use so much or cook it longer.

Yeah it will. Whey in the nuker will turn into a solid mass. It ain't pretty and tastes like

i mean does it effect the nutritional value a lot?
