I recently started eating 3000+ calories per day. I'm 19 years old, I'm 5'9 and weigh about 145lbs...

Monday:
Bench Press 3x5
Dips 3x15
Shoulder press: 3x10

Wednesday
Lat pulldown: 3x5
Pullup:3x10
Row: 3x10
Crunches.

Friday same as monday

(I can't do legs quite yet, as am in physical therapy for my leg...but how does this routine look for size and strength gains?)

Does the therapy mean no deadlifts?

It's pretty OK. Not sure about your rep scheme or wether you plan to mix that up. You could stand to do slightly more volume perhaps. Say on Monday add Close Grip BP and Wednesday add bicep curls or some other sort of rowing motion.

Get the legs in there as soon as you can.

Burn shmurn. If you simply don't like them then do skullies or something else. Good to hear you following orders and looking after those knees.
