BAM Salmon

8-16 oz. Salmon fillet
Liquid Smoke
Emeril's Original Essence (I found it at Albertson's)
Butter (If you want but not neccessary)

Rinse salmon throroughly and dry with paper towel. Lay skin side down on large sheet of aluminum foil. Cover flesh with butter, add large dollop of Luquid Smoke, cover with generous amounts of Essence. Seal aluminum foil tightly around salmon and place in pre-heated 350 degree oven. Cook time will vary depending on thickness of fillet. Thinner fillet's will take 35-40 minutes, thicker cuts will take 45-50 minutes. Always err on the side of "under-done", you can always throw it back in the oven for a few more minutes. Keep plenty of towels handy to sop up your drool from the smell that will fill your house as it's cooking.

I usually grill some salmon at least once a week!! Great!!! White Pepper and cajun season is the secret!!!

I do like cajun spices on beef and chicken but I'm not thrilled about cajun salmon. Now if that was the only thing on the menu I certainly wouldn't go hungry!

I've got some good friends that are first generation Mexican and they HATE hot food. REAL Mexican food is rather bland. They call the hot stuff "Gringo Mexican".

It's a liquid that comes in a bottle that is flavored with hickory or mesquite smoke flavor(strong!) Doesn't take much!

It's in the BBQ sauce section of the grocery store. It's exatly what the name implies. Just pour it over whatever meat you're cooking or into whatever sauce you're making and it gives it that nice smokey flavor.

P.S. Do NOT taste test it right out of the bottle!!! I give you that advice from experience.

Liquid smoke also adds a nice flavor to baked beans.....not that that's as good for you as salmon! I'll definitely have to try this one soon.....

I wanted to add a little BAM try the new Emeril orange marinate and my secret is you soak the fish in milk 30 mins gets ride of the real fishy taste and rice OMG it's so good

a half lb is a lot really 1 1/2lbs is 3 days of leftovers mummmm.

just made it last night again I love salmon wk. BAM

Ooh, now that would be a smokin' chick.............pea flavor! Yum. Of course, I think the chickie, umm, chickpea, goes good with just about anything.
