If you are looking to gain muscle, then carbohydrates are great, most people neglect them in favour of more protein.
As you stated Complex carbs are where it is at, so stay away from the processed foods.
There is no magical number on how many of a certain macro you should be consuming. You know where your past and current diet have been at, so make adjustments that you feel comfortable with.
Your negative view may be a bias based on the media.

Hard to say, I don't know anything about you
There are a lot of factors that go into how many calories you need to consume.
How many calories do you need to consume to stay the same weight?

to stay the same weight around 3000-3500

Personally I would bump up the Cals by about 10% from maint. And evaluate progress for a couple of weeks. No need to jump right into 4000+ cals.

ok i'll start at 3700cals and increase every few weeks if i'm not gaining. i'll take it slow
