Frying w/olive oil

If I was to have pan fried chicken cutlets w/the olive oil I'd be frying it with as my healthy fat for the day, is this ok? Im pretty sure I've read that frying with the olive oil does something to turn it's healthy fat bad? Thanks.

Personally I wouldn't with Olive oil.

If you chose to, make sure you are using EVOO and make sure it has a really low acid count, that seams to impact smoking point.

A good EVOO with low acid count is around 405 - 420.

Ian thanks, im not sure what you mean by acid count and smoking point though? Does that have a negative affect on the healthy fat in EVO?

Acidity of the EVOO is dependant on the quality of the oil and the manufacturing process. No impact on the healthy fat.

Smoking point is the temp at which the oil begins to smoke, At that point the healthy benefits are ruined.

Olive oil is my fav to cook with. Temps are very important for flavor as well as health. People tend to crank up the heat ... essentially because we are all in a hurry to get it done now and move on.

Lower heat normally does a better job of cooking food more completely and helps the food develop a better flavor without breaking down the nutritional value of the meal much. Just takes a little longer is all ...
