If I was to have pan fried chicken cutlets w/the olive oil I'd be frying it with as my healthy fat for the day, is this ok? Im pretty sure I've read that frying with the olive oil does something to turn it's healthy fat bad? Thanks.

Personally I wouldn't with Olive oil.
If you chose to, make sure you are using EVOO and make sure it has a really low acid count, that seams to impact smoking point. A good EVOO with low acid count is around 405 - 420. |
