Getting back in the gym

Hi Guys and Gals, well it's been a while since I have been in a gym (12 months), however it's come time for me to shed a few kilos and pack on some mass. Work has seen me travelling too often and have been too jet laged - All excuses!!!!
I am 41 years old, pretty fit, but have put on about 10 kilos of beef around the stomach that I am desperate to shed.
I'm looking for a program that keeps me in pushing weight the gym for 4 to five days and a cardio program 4/5 days a week. I am looking for an all over change of lifestyle. Diet, gym and cardio.
Anyone have a decent program that will see me right, until I sort myself out and get used to the idea of training again. Until I work out what's working and what's not?
Lastly, I have a question about pre wor out nutrition. Is it good to protein shake prior to an immediately after a work out? Or is the latest craze to W/O on an empty stomach - Something I cant do. Very keen to find out the good oil from the experts out there.

there is no canned program, but if you're looking for a book/manual I recommend the following:
