If im not eating enough in each of the 6-8 meals a day, would that hinder my ability to burn fat (increase metabolism)?

You are making things way too complicated.
Get adequate proteins, healthy carb choices, EFA's
Get adequate Calories, and balance the meals so a steady stream of nutrients are being provided. Dieting is really simple, don't over complicate things.
