South Western Frittata

A frittata is like a quiche w/o the crust = healthier.
1 medium (8 ounces) sweet Potato, peeled, diced
1/2 medium onion, diced
1 red or green bell pepper, seeded and diced
1 clove garlic, minced or pressed
1/2 stalk celery, chopped
1/2 chopped tomato
3 large eggs
6 egg whites
1/3 cup shredded lf/ff cheese
1 T finely chopped cilantro or parsley
1/2 tsp. salt
1/4 tsp. black pepper
In a large non-stick skillet, spray pam and add potatoes, onion, pepper and garlic, celery, tomato, cilantro. Cook, stirring occasionally for about 8 minutes or until potatoes are almost cooked.
In a medium bowl, whisk together eggs. When potato mixture is cooked, add eggs and lower heat and cook uncovered for about 10 minutes or until egg mixture is almost set. Pre-heat broiler. Sprinkle cheese over eggs.
Place skillet under broiler, about 6 to 8 inches from the heat source. Cook for 1-2 minutes or until eggs are set on top.
This is awesome. If you happen to get a mouthful of tomato and cheese in the same bit, it tastes like pizza, oddly enough.
Variations I'm gonna try in the future:
Rice, instead of potato
Different veggies
Addition of 1-2 tbsp salsa
