chicken jambalaya

Here's my chicken jambalaya recipe. It's simple, but low fat and very tasty! (this is from a cookbook that I own, so I can not take credit for creating the recipe)

You need:
1/3 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped green pepper
2 tbsp margarine or butter
14 1/2 oz can of tomatoes, cut up
1 1/2 cups chicken broth
2/3 cup long grain rice
1 tsp dried basil or thyme, crushed
1/4 tsp garlic powder
1/4 tsp pepper
1/2 tsp bottled hot pepper sauce
1 bay leaf
2 cups cubed cooked chicken

In large sillet cook celery, onion, and green pepper in margarine or butter until vegetables are tender but not brown.

Stir in undrained tomatoes, chicked broth, uncooked rice, basil or thyme, garlic powder, pepper, hot pepper sauce, and bay leaf. Bring to boiling, then reduce heat. Cover and simmer for about 20 minutes or until rice is tender, stirring occasionally. Stir in chicken. Heat through. Discard bay leaf. Makes 4 servings. (per serving: 12g fat (3g sat.), 32g carbs, 2g fiber, 27g protein)

MY NOTES:
-I'll usually cook the chicken cubes before I get started, in a skillet with a little bit of olive oil.
-I buy "Italian style" can of tomatoes and broth, for all the extra spices.
-I like my jambalaya hot, so I'll at least double the amount of hot sauce.
-I use two bay leafs instead of one.
-I serve the jambalaya with my homemade popovers.

I can post the popover recipe if you're interested. No problem!

By the way, to cut back on some of the 12g fat per serving in the jambalaya, just use less butter. That's where almost ALL the fat in the recipe comes from. Personally, I'm not too concerned about the 12g fat, but that's just me.

i've been making this for a few years....whenever people are coming over and i have to make it look like i can cook.

Aren't popovers just flour, eggs, milk and a little oil mixed ina blender then baked in a popover pan? I have to get me another popover pan. Mine came up missing when I moved awhile ago.

make it! it is so easy - really! i get a reaction like i'm this great cook and believe me...i'm not. i'm telling you it is so freaking good! but listen to iab's notes and increase the hot sauce by a lot.

(i've never made the popovers though...i don't have the pan and i have no doubt i'd eat every last one of them myself which would be very bad.)

Kitchensetc. com, I think that is where I ordered mine from. It said it was on back order, but I sent mine in anyways. I got it a few days ago!

I need to pop into this forum more often.

You are most welcome. This is still one of my favorite recipes.

I have not made popovers in a long time.

I have the six popover pan you linked there. I have not gotten the hang of that pan. They popovers always come out hard on the outside, mushy in the middle. I probably just need to turn the heat down on the oven and bake them longer. I just use a plain old cupcake pan. The rolls come out smaller, but bake perfectly every time.

By the way vetta717, that pan does come with a popover recipe.
