SIMPLE recipe!

Preheat oven to 450 degrees. Grease popover pans.

Beat two eggs in a mixing bowl.

Add 1 cup milk, 1 tbsp melted butter, 1 cup flour, 1/4 tsp salt to mixing bowl. Beat mixture until thoroughly blended (batter should have the consistency of heavy cream). Fill popover pans about halfway with mixture.

Bake at 450 degrees for 20 minutes, then reduce heat to 350 and bake for 20 more minutes. Popovers should be firm, but not overbaked. Makes 6 large popovers.

My notes:
-Intead of melted butter, you can use 1 tbsp cooking oil.
-If you do not have a popover pan, a cupcake pan will be fine. The popovers will just be smaller and won't need to bake quite as long.
-To cut back on the fat, use skim milk. I always use skim milk when I make these.

As MBC said, the pan is a must! It was FREE for us...one of the advantages of having a wedding!
