Does anyone have any recommendations for a cook book? So far, I have been recommended "American Test Kitchen" and "Joy of Cooking". I have been going through the recipes posted on this site, but I would like to get a solid cook book with healthy meals.

Thanks for all the replies. Most the cookbooks I've looked at have recipes that serve several people when I only want something for 1-2 servings. Foodnetwork.com is great though. Thanks again.

Use half the ingredients? Or make up the full batch, then portion it out and freeze.

If I make something like lean beef chilli for example, I would make enough for about 12 serves and then freeze it all with a side of brown rice. Then when I am screwed for food, I have a fallback.
