Almonda raw verse roasted

So, I know that almonds are a great snack (in the right quantities) but is there a difference in raw verse roasted?

I'm not talking about store bought roasted, just home roasted low heat (250F)with no salt or oils.

While I don't mind raw almonds, I love them roasted (I tend to let them get fairly dark)

I don't think it will make a difference.

There are articles out there that the oils and omega fatty acids get ruined from the heat. However I haven't seen any scientific evidence.

Almonds labeled raw are actually not what most would consider raw, that's in the USA. I think real raw would be best. Pasteurized would be second best and roasted would be my last choice.

I guess with all the pathogens turning up in, eggs, meat, juice, peanuts, pkg greens etc etc etc ... I'm sure there is much more heat coming to the raw food debate.

I don't know if raw is healthier, but it sure as hell taste better. I only eat raw nuts, and I buy mine by the pound at the local fresh market.

and oh, raosted nuts usualyl have a ton of sodium. Make sure that you get the non-salted if you care about sodium intake.
