I love 1911's. I have a Ed Brown Custom and a Springfield TRP. (the kimber parts you are refering to are the MIM parts that Kimber uses - hammer, sear, firing pin stop, slide stop, grip safety, thumb safety, disconnector(?), swartz safety parts........ Most guns use MIM parts just not usually 1911's so no need to fear) I carry a HK USP compact 9mm, and a HK p2000sk. I love my HK's. (as my username implies LOL) There are plenty of great options for carry and home defence weapons out there. (I just bought a used glock 19 gen 3 for my mother for only $350)
1911s are awesome but keep in mind that they can be picky with ammo and mags. (only buy the best of both - I only run Wilson Combat mags myself)
Good choices Ed Brown makes a fine weapon and H&k are very reliable.
I carry a hammerless .357 snubby. Its no brainer to use. no mags no safety. "it's the original point an click interface!
When I feel like I need a bit more then it is the Kimber Ultra CDP .40 cal with two extra mags.
OTOH my Kimber was made in the "custom shop" not really a big deal. And defininatly not a "custom" gun. I did send it back to them and had them rework it for reliability. works great now. and it will feed about any commercial loads.

All you guys hoping for someone to break into your house, I seriously hope you don't ever have to go through that. My step-father was a bail-bondsman, he carried 2 guns on him, one in his ankle and one in his shoulder holster. He had several dozen guns in his house in the secret compartments behind the bookshelves, plus he had them in several drawers around the house. He was on the phone one night and heard a noise down stairs. Even with his pistol handy he got hit by a bat by a hidden intruder, knocked unconcious and then the 2 sleaze bags burned down the house thinking they killed him. He wasn't dead though, but he died from smoke inhalation.

I certananly hope to NEVER have to use deadly force. BUT I am willing to protect myself and family with it. I pray I don not ever have to.
