Her "I love you," to my anaylsis, is a conceptually planned response that she wanted to squeeze in somewhere and make it sound casual, wherein reality it was probably planned for days. - notice there was no "luv u" which I'm sure there has been in the past, perhaps over the last 2 or 3 days
You did fine. If you have feelings for her great, let her know when it's comfortable for you and appropriate for her. If not then find a good neutral time to let her know that she may be being too forward.

Really though, I think you made a good choice in that. When someone says "I love you" in your relationship and you arent sure about it, you dont need to break it down for them unless they are taking it poorly. If she says it to your face and you say "Thanks" and she bursts into tears, then you can explain the whole "word is overused... want it to mean something... I really care about you..." thingie
