It's always 9.
edit: If the number you pick is n, and the digits are a and b. Let the number we are looking for be x. n = 10a + b x = n - a - b replacing for n gives x = 10a + b - a - b x = 9a so the final number is 9 times the first digit. The symbol scheme changes every time so that every possible outcome has the same symbol. The symbols don't remain constant.
