    CHEF LARRY'S CHOCOLATE BOX WITH DIPPED STRAWBERRIES
    Yield: 4 - 6 Servings







    Ingredients:
    1-1/4 lb. Dark bittersweet chocolate
    for service Chocolate dipped strawberries (recipe precedes)
    to garnish Chocolate butterflies


    Method:
    Melt and temper dark bittersweet chocolate. Pour a thin layer of tempered chocolate onto two flat, parchment paper lined sheets. Cool at room temperature until slightly firm.
    With a sharp paring knife cut out top and bottom pieces of box (2 pieces - 4 ¼ inches by 6 ¼ inches) and sides (2 pieces – 4 inches by 2 inches and 2 pieces - 6 inches by 2 inches). Carefully transfer pieces to another flat pan and allow to harden.
    Re-melt remaining chocolate. Once pieces are set, fasten and decorate with melted chocolate. Pipe chocolate butterflies onto a sheet lined with parchment paper. Allow chocolate box and chocolate butterflies to set. Prepare chocolate dipped strawberries per recipes. Place finished chocolate box onto a silver serving tray lined with doilies.
    Place dipped strawberries in and around chocolate box. Decorate with chocolate butterflies and present.
