in Scarface it was the real deal according to Pacino. I would not find it hard to believe that thats the case in alot of movies, same with the weed. I mean its a closed set, no one is going to arrest some bigtime celeb for "getting into the role"..lol. interesting question thou. of course my post post is just speculation.

probably any number of things used to cut it with like inositol.

    http://www.knowgangs.com/drug_resources/menu_003.htm
"Illicit cocaine is usually distributed as a white crystalline powder or as an off-white chunky material. The powder, usually cocaine hydrochloride, is often diluted with a variety of substances, the most common of which are sugars such as lactose, inositol and mannitol, and local anesthetics such as lidocaine. The adulteration increases the volume and thus multiplies profits. Cocaine hydrochloride is generally snorted or dissolved in water and injected. It is rarely smoked"

PURE INOSITOL POWDER. Inositol is a member of the B vitamin family. It is utilized in fat metabolism, helping the liver to eliminate excess fat, reducing cholesterol levels, helps prevent hardening of the arteries, and may protect nerve fibers from excess glucose damage. Diabetics are prone to over excrete this substance and supplemental intake has been found beneficial for the prevention of neuropathy. Inositol has a natural calming effect and may be used in the treatment of anxiety, depression, and obsessive-compulsive disorder without the side effects of prescription medications.
