Does that stuff have real world application? They just look like they're trying to grab each other. If a real fight, an oppenent would be trying to hit, kick, or rip the guys eyes out. Would this stand up to that type of fight?

Right, but if you already have them in an arm bar and are using the power of your back and legs against their one arm it doesn't matter what they wanted to do with that arm when its broken. Or just grab someone you know who is experienced on the ground and ask them to perform some choke holds on you, they work quite well even though on TV they don't look so bad. You can even do some of them standing up actually.
Last bar fight I broke up was on the ground, and frankly I'd prefer if someone attacked me that I could take them down. Problems arise when its more than one person however.

Bingo. Which is why I dont consider submissions in the real world all that effective.
One on one, you cant get around it, but when a grappler is at, say, a bar and gets into a fight with someone. Unfortunetly, that 'someone' has a friend that will pummel the grappler in the middle of a setup.
UFC and Pride are more entertaining than ever now that it has become popular. In the beginning, grapplers were dominant over strikers, but in time, BOTH techniques were learned, hence the name MIXED Martial Arts.
So I suppose in conclusion, its best to know a little of everything, even in a bar fight.
