    Storing food for a week.

I work for a week at a time and pre-cook all of my food before I leave home. I usually store 5 days worth in the fridge but won't go any longer than that because I feel that's already pushing the limits before it goes bad. I was wondering what I can do for the last two days. I can usually get rice and potatoes while I'm here so those aren't to big of a deal, it's storing my meat that I'm really concerned about. Could I freeze it than leave it in the fridge and by day 6-7 it should be unthawed and good to eat?

Heat kills bacteria. Think of the jars in your cabinets that last forever.
So heat your containers, then fill with HOT (like 180 degrees F, 85 degrees C) food, and seal them.

One week in the fridge will then be no big deal, especially if you keep your fridge at 35 degrees F (2 degrees C).

Absolutely, you can thaw cooked frozen meat and reheat.

Food gets dingy after a few days. I was just talking to my coach about food storage.

Cook 2 days worth of food. Anything past 2 or 3 days starts to get dingy! My wife and I use Pyrex glass containers and fill them with chicken, fish, beef, etc , then store them in the fridge. The rice and potatoes are microwaved so no need to refrigerate that stuff. Then repeat. The only thing about food prep is having the balls to get up early and cook shit for 3 days and actually following through and eating it after cracking open that container...

7 days of food would need to be vac'd and put in the freezer, but I hate the way the food taste after defrosted !!!

6-7 day old meat is pushing it, definitely freeze it. But I recommend if you deforst it you gotta eat it that samne day!
