Cauliflower au Gratin

4 cups cauliflower florets
1 1/2 tablespoons cornstarch
1 1/2 cups skim milk
1/2 cup shredded reduced fat cheddar cheese
1/4 cup grated Parmesan cheese
1/8 teaspoon dry mustard
1/8 teaspoon pepper
1/2 cup dry breadcrumbs

Steam cauliflower until crisp-tender. Place cauliflower in a shallow glass baking dish sprayed with cooking spray.


Combine milk and cornstarch in a saucepan and heat over medium heat until thickened, stirring constantly. Stir in cheddar cheese and 1 tablespoon Parmesan cheese, mustard and pepper and continue to cook and stir until cheese melts.

Pour sauce over cauliflower and sprinkle with remaining Parmesan cheese and breadcrumbs. Broil for 5 minutes or until heated through and breadcrumbs begin to brown.
