1 1/2 cup reduced fat Oreo cookies, crumbs
1/4 cup reduced fat margarine, melted
3 tablespoons sugar
3 ozs lime gelatin
2/3 cup boiling water
1/2 cup cold water
ice cubes
1 teaspoon peppermint extract
8 ozs Cool Whip Free, thawed

1. Combine cookie crumbs, margarine and sugar in a small mixing bowl.
2. Chill for 1 hour.
3. Completely dissolve gelatin powder in boiling water.
4. Combine cold water and ice cubes to make 1 1/4 cups.
5. Add cold water to gelatin mixture and stir until slightly thickened.
6. Remove unmelted ice cubes. Set aside.
7. Fold peppermint extract into Cool Whip.
8. Blend whipped topping mixture into gelatin mixture using wire whisk. Whip until smooth.
9. Chill until mixture mounds.
10. Spoon Oreo mixture into bottom of dessert glasses.
11. Spoon Cool Whip mixture on top of Oreo mixture. Continue layering until all is gone.
12. Chill. Serve.
