Your rep scheme is fine, just adjust the weight so that the last rep of each set is to failure. (In other words for your 7 rep set choose a weight where you can do 7 reps but not 8)
Make sure you have a spotter.
THis is my bench routine..
bar warmup: 15 times
8 reps at 125
7 reps at 135
5 reps at 155
4 reps at 175
i like starting off light because for me...it takes me awhile to warmup....but at my 7 rep 135 mark...its easy...should i bump that up to 7 reps of 145 and maybe bump the 5 reps to 5 reps at 160? In other words...is increasing from 155 to 175 too much of an increase?

Don't rack the weight untill your done, no matter how many reps you have planned. (Unless you are on a very specific program that states otherwise)
I usually go up 5-10% on all exercises. 155 to 175 is a pretty big jump. However, if you can still lift it a reasonable number of times, then go for it.
The only time it's bad to feel the burn is when you're peeing...

250 5 times
270 3 times
290 1 time
Then I do 135 25-30 times
My goal is to be up to the 350 mark by the end of the summer.
