Broken Up Workouts

Hi Guys,
I've been doing some chin ups in my spare time at work
because the racking that we use to store pallets makes
an ideal chin up bar.
I'm wondering if doing a few sets of chins outside of the
usual workout would really do any good?

I have also noticed a guy that works at one of the gyms
I attend does a few sets here, then five mins later, does
his sets of another excersise, so his workout is really
broken up.

Instinct tells me this isn't much of a workout??
