Lats & Rhomboids: Rows, chinups, and pullups are my favorites.
Posterior Delts: Perpendicular rows, face pulls, and reverse flys are all good.
Erector spinae: Deadlifts, good mornings, and hyperextensions/reverse hyperextensions all do the trick.
The only time it's bad to feel the burn is when you're peeing...
