    2x a week VS 1x a week

For strength and mass gains. I personaly would have to go with 2x a week because, all last year I did 2x a week and made very good gains. This year I heard 2x a week is over training and not enough time to recover. So I did 1x a week for 2 months and didnt seem to have much gains. I just switched back to 2x a week and in a week increased exercises by 5-10 pounds.

It depends on the volume and the person. You might do half the volume someone does in one workout two times a week. Or you might respond better to that kind of training, there was a member named Dr. Pain who did very high volume for workouts and he was very big, and then there are people like LAM and Ducan donuts who train very low volume and they are both huge.

It should, as long as your form is good.

How is 2x a week overtraining? Am I understanding this correctly?
What this means is that when we drop a ball and it falls to the ground, it wasn't the ball that moved (down to the ground), but the ground that moved (up to the ball)

You can over train even if its just once a week if your volume is to high.

Why dont people understand this? This is like the tenth noob asking about this like this in the past few days.

Clear and simple - when it comes to training, there are no cut and dry rules that apply to everyone. You need to get your ass in the gym and figure out what works for you. Try high volume, try low volume. Try it all. Adjust as necessary. Stop asking for cut and dry answers, because there is none.

Your saying they're against 2x a week in favour of 1x a week?

Training perfect doesnt involve asking "is 1x or 2x per week better?"

Even over there people said you need to figure out what works best for you... but you still want an answer. Try it and see how it works. That's the answer.

Training a muscle 2x a week, or even 3x a week is just fine. You just have to make sure you compensate by decreasing volume and possibly intensity as well.

Also, getting stronger does not necessarily mean getting bigger. You will not get bigger if you are in a caloric deficit.

I've been wondering about the opposite here, since i'm particularly weak and I don't really seem to be getting much stronger.

Let's say you keep your calories 500 above maintenance, but your strength stays the same even if you're putting fourth your best effort; where will the extra calories go?
Homer: Hey! I saved your life! That egg sandwich could have killed you by cholesterol.
Lenny: Pfft, forget it, Homer. While it has been established that eggs contain cholesterol, it has not yet been proven conclusively that they actually raise the level of serum cholesterol in the human
    blood stream.

You can still gain muscle mass via sarcoplasmic hypertrophy. I don't really know how one would go about shooting for one type of hypertrophy or the other, but sarcoplasmic leads to virtually no strength gains. So, muscle will still be built. The rest will either be pooped out or stored as fat.
