What kind of weight training and cardio should i be doing if i am looking to lose body fat and not lose too much muscle? Right now i am 5'8 180lbs and 19%BF. i want to get down to at least 10% BF. right now i am on a good diet - 2300 cals - 40/40/20 ratio.

I would use a 3 or 4 day split, and do some HIT cardio a couple times per week on days you don't lift. Keep your cardio sessions brief (under 30 minutes) and intense.
