Are you asking why we release GH while training and not when we rest?
Or what does GH do for us?

Its not so much the hGH that gives you the effect as much as the androgenic hormones- testosterone, the catecholamines, etc- and the locally released IGF-1.

Growth hormone in and of itself has no effect on muscular growth, though it might act in synergy with increased levels of both test and IGF-1 to aid further growth.

In longer sets of squats, the growth hormone can be an aid to fat loss, as it is highly lipolytic.

It aids both! Both muscle growth and fat loss ultimately.
If we are talking about the natural bodybuilders here...if you do not do heavy leg exercises/squats, you will limit your muscle growth rate, no matter how hard to exercise your other body parts. And why wouldnt you want big powerful legs anyways?

GH assists in growing any and all cells, which is why it is sometimes used in cases where small children are not growing at all, but even in that arena it is hotly debated.

I never said it didn't assist in growth. Just that it wasn't the main component, and in fact probably does very little directly for growth of muscle.
