All this GI stuff is fricken annoying, one study says this while another says that, what's low gi/what's high gi? Sorry for my rant but it's really annoying.
 
The gi of a particular food can be influenced by what's eaten with it. For example, eating protein and fat will lower the gi of a high gi food, because they slow stomach emptying and absorbtion.

Maybe that's where the confusion comes in. Just don't eat a high gi food by itself or with only fat (white bread alone or with butter... bad combo).
 
Yep, actually ice cream becomes somewhat low GI because of the milk fats. Chocolate is the same way, chocolate is not acceptable for a diabetic with low blood sugar because it is SLOWED down due to the fats.

To a point with a balanced diet, Dan Duchaine says GI of the carb doesn't matter as long as you observe quanities and your method of spreading them out :shrug:
 
The GI of food can also be changed by how it is cooked. The best example is only cooking pasta to "al dente"(sp?) will lower the GI versus overcooking it.
