Could someone suggest a good very-low-calorie very-low-carb thickener to add to cottage cheese to increase its consistency (i.e. make it "feel" more solid, say, as cream cheese). Would xanathan gum do it?

add a teaspoon or so of the gum, and a cup or so of cottage cheese, blend it, and youll have something pretty damn close to cream cheese.
