Coconut Cream Pie protein pudding

I recently purchased some Silk Coconut milk.
When mixed with Casein Protein there was a reaction and it made the "shake" really thick... So
I got some unsweetened coconut. natural vanilla flavor and psyllium powder.

coconut cream pie pudding

16 oz silk coconut milk Vanilla flavor
2 scoops Vanilla casein protein
1 t psyllium powder
3 T shredded unsweetened coconut

put in a medium bowl and mix with a hand mixer.

put into 4 small bowl and refrigerate.

Thicker than casein is normally? Geez. This sounds tasty, may have to try it. thanks!

Yeah some reason the Silk Coconut Milk got really thick like pudding.
Almond Milk does not get as thick as the Silk Coconut milk.

I have to scrape it out of the blender with a spatula. Now I mix it in a bwol with a mixer for a sweet desert snack

If anyone knows what causes the Silk Coconut milk and casein to react I would be interested to know why?


Any Food chemist on the board?

All Natural Coconutmilk (Filtered Water, Coconut Cream), Evaporated Cane Juice, Calcium Carbonate, Natural Flavor, Dipotassium Phosphate, Xanthan Gum, Carrageenan, Guar Gum, Cyanocobalamin (Vitamin B12), Vitamin A Palmitate, Vitamin D2.

the gum additives are what thickened it more.
